I use organic all purpose flour in my baking recipes. Organic flours have less pesticides than conventional ones and are unbleached. I've also used white wheat and whole wheat flour in this recipe to make it even more healthy.

Your zucchini bread might fall in the middle because either there is too much moisture, you didn't bake it long enough, or you are using old baking powder/ baking soda. Make sure to use the exact measurements for the recipe, don't be tempted to throw in extra zucchini just because you grated too much. Bake until the toothpick inserted into the center comes out clean.
I made this recipe today and it came out incredible!! This bread has ingredients that make my body and stomach feel GOOD without depriving my sweet tooth.. a win win!I used pecans instead of chocolate chips for a bit lower sugar, the bread came out moist, fluffy, and left the house smelling like heaven. Trying your other recipes soon!
So excited when they posted this recipe. I love zucchini bread but my body does not love all the oil& sugar. The dark chocolate chips add just enough sweetness!! So happy for this recipe and the bread was moist on the inside with a perfect crust on the outside!! YUM!!
Hello, I just made your recipe for the Zucchini bread made with Oat flour. Mine bread came out really dry. When watching your video, i noticed your batter was a lot thinner than mine. I went over the recipe 3 times to make sure I used the right amount of each ingredient and I did.Can you tell me what may have happened? Your bread looked so moist.
Yes! Zucchini bread freezes very well, so double the recipe and freeze a loaf for later. To freeze, let it cool completely at room temperature. Then, double wrap it in plastic wrap, then wrap in foil or place in a freezer bag. When ready to eat, unwrap the foil and let it thaw.
Hi Kim! I have a zucchini bread recipe made with 1 to 1 gluten free flour. I also have a cassava flour banana bread recipe. For the cassava flour banana bread, you might be able to get away with doing 1/2 cup grated zucchini and 1/2 cup mashed banana. It may not be overly sweet, but you can always add more chocolate chips. Hope this helps!

My goal with recreating vegan recipes like this is to keep it as similar to the original as possible. So with this vegan zucchini bread, the main thing we needed to substitute was simply the eggs. I swapped the eggs out for apple sauce and kept everything else pretty simple. Flour, sugar (white and brown), some spices, oil. You get the idea.
If you make this gluten-free zucchini bread recipe and love it too, please come back and give this recipe a 5 star rating in the recipe card! Feel free to comment with tips or to share any successful substitutions you made.

A great cake/ bread, thank you Bianca! I am from Australia but we were in Germany this year and it was nice to know you are from there. Reminded me of the beautiful places in Germany we visited. And there are more vegan choices in the supermarket there I noticed. Thanks again for your tasty recipe!
I thought I should finally leave a comment. This recipe is fantastic and has been my go-to for a few years now. I pull it out whenever I start harvesting zucchini from my garden each year and it is a treat we look forward to. I have sugar pumpkins this year so I am going to try your pumpkin bread recipe now. 2ff7e9595c
